Sweet Potato Nachos

Sweet Potato Nachos

Serves 4-6

Ingredients:

  • 3 sweet potatoes, washed and sliced into ¼ in rounds
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 can black beans
  • 1 ½ cups reduced fat cheese
  • ¼ cup green onions, chopped
  • ¼ cup cilantro, chopped
  • 1 avocado, diced
  • salsa
  • plain Greek yogurt

Directions:

  1. Preheat the oven to 375 degrees. Line two baking sheets with parchment.
  2. Toss the sweet potato rounds with the oil and seasonings in a bowl. Lay out on baking sheets.
  3. Bake for 20 minutes, flip, then bake for 10 more. Reduce the baking time if your sweet potatoes are sliced thin. Watch so they don’t burn.
  4. Remove sweet potatoes from oven. Top with cheese and black beans and return to the oven for 5 minutes or until cheese is melted.
  5. Top with green onions, cilantro, avocado and salsa if desired.
