Move over sandwiches there’s a new lunch staple in town, and this one is a vegetable! Packed with flavor and even more nutrition, this Mexican Stuffed Sweet Potato lunch will satisfy even the hungriest appetite.
Carbohydrates can be a touchy topic for some people, but sweet potatoes fit into almost every meal plan. Nutritious and delicious, sweet potatoes can be used in a variety of exciting ways from baked and stuffed to sliced into fries. This recipe goes the traditional route – yielding one delicious, nutrient packed sweet potato. Cooked and put together in less than 10 minutes, there’s no way you’ll ever go back to a boring sandwich again!
- 1 sweet potato, washed
- 1/3 cup black beans
- 2 tablespoons cheese of choice
- 2 tablespoons salsa
- 1 large handful spinach
- 1 teaspoon chili powder
- ½ teaspoon garlic salt
- Pierce freshly washed sweet potato with a fork all over. Heat in the microwave 5 minutes or until soft.
- Slice open sweet potato and mash the inside a little. Add black beans, seasonings and cheese. Microwave another 30 to 45 seconds or until cheese is melted.
- Spoon salsa on top of sweet potato and serve with spinach on the side.
This recipe can be made the night before and reheated or made 10 minutes before your stomach starts growling. It is easily prepped and packed for a work lunch, but it can also make a quick and easy dinner!
