Chocolate Banana Pudding Recipe
Serves 2
Pudding Ingredients:
- 3 ripe bananas
- 1 tablespoon maple syrup
- 2 tablespoons cacao powder
- 1 teaspoon vanilla extract
- pinch sea salt
- ½ banana (topping)
- 2 tablespoons walnuts, crushed (topping)
Whipped Cream Ingredients:
- 1 can coconut cream (chilled overnight)
- 1 tablespoon maple syrup
- ½ teaspoon vanilla extract
Directions:
- Add all of the pudding ingredients except for the toppings into a high speed blender or food processor. Blend until smooth. Pour pudding into a bowl and chill for a few hours or overnight to thicken.
- To make the whipped cream, scoop out the coconut cream and leave the water inside the can (reserve it for another use). Whip the cream together with maple syrup and vanilla until light and fluffy.
- To serve, divide the pudding amongst two glasses. Top with coconut whipped cream, banana slices and crushed walnuts.
