Salsa Beef with Cilantro Lime Couscous

Healthy Dinner RecipesThis quick salsa beef dinner provides both whole grain carbohydrates as well as filling protein. Though couscous is often considered to be more of a simple carbohydrate, it provides protein, fiber and essential vitamins that many other grains don’t.

Just a one-cup serving of couscous contains 6 grams of protein, 2 grams of fiber, as well as the essential B vitamins thiamin, niacin, riboflavin, B6 and folate. These vitamins are essential in that they help metabolize energy, maintain healthy red blood cells, and keep the skin, blood, brain, nervous system, immune system and heart functioning optimally.

Makes 5 Servings

Salsa Beef Ingredients:

  • 1 lb ground beef, grass fed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 cup salsa

Cilantro Lime Couscous Ingredients:

  • 1 ½ cups couscous
  • 1 2/3 cup water
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice, fresh
  • ¼ cup cilantro, chopped

Directions:

  1. Heat the 1 2/3 cups water over medium high heat until boiling. Once boiling add the couscous. Cover and remove from heat.
  2. Heat a saucepan over medium heat with 1 tablespoon olive oil. Add the onion, garlic and ground beef. Cook until meat is no longer pink.
  3. Add the bell peppers to the meat mixture, cooking two minutes.
  4. Finally, add the salsa and bring the temperature to medium low. Allow the mixture to simmer for 10 minutes.
  5. Once couscous has absorbed all of the water, stir in the garlic, lime juice and cilantro. Season with salt if desired.
  6. To serve, top couscous with salsa beef. Add toppings such as cheese, avocado, tomatoes or more cilantro if desired.

Notes:
