The following five no bake paleo desserts are naturally gluten-free, grain-free and made without any dairy or refined sugars. Simple to throw together, these desserts are healthy alternatives to processed options yet are still sweet enough to curb that sweet tooth!

Makes 12 squares

This fudge might be made without any refined sugars or dairy, but you’d never know it from the taste! Rich, creamy and full of bold chocolate flavor, this fudge is perfect to have on hand when a chocolate craving hits.

Ingredients:

  • ½ cup cacao powder
  • ½ cup coconut oil, melted
  • ½ cup almond butter
  • ¼ cup maple syrup
  • pinch sea salt
  • ¼ cup walnuts, chopped [optional]

Directions:

  1. Line a 9×5 loaf pan with parchment paper. Set aside.
  2. In a bowl, beat together the almond butter, maple syrup and coconut oil until smooth.
  3. Add the cacao powder a little at a time, mixing until well incorporated. Add a pinch of sea salt if almond butter is unsalted.
  4. Stir in walnuts, if using. Pour batter into prepared loaf pan. Shake pan gently to evenly distribute fudge.
  5. Set pan in the freezer for at least two hours. Once hardened, slice into 12 squares. Keep refrigerated until ready to eat.

Traditional buckeye cookies are made with peanut butter, however we swapped it out with almond butter and used coconut flour instead of white flour to create a 100% paleo-friendly treat.

Ingredients:

  • ½ cup almond butter, smooth
  • 3 tablespoons maple syrup
  • 6 tablespoons coconut flour
  • 1 teaspoon vanilla extract
  • pinch sea salt
  • ½ cup dairy-free chocolate chips

Directions:

  1. Line a baking sheet with parchment paper. Set aside.
  2. Beat together the almond butter, coconut flour, maple syrup and vanilla extract. Add a pinch of sea salt if almond butter is unsalted.
  3. Using a tablespoon at a time, roll batter into balls. Set on a prepared baking sheet and chill for 30 minutes.
  4. Place the chocolate chips in a microwave safe bowl and microwave on high for 1 minute. Stir until smooth.
  5. Dipping one at a time, pierce a ball with a toothpick and dip halfway into the melted chocolate. Gently tap the side of the bowl to remove any excess chocolate. Place back onto the baking sheet. Repeat with remaining balls. Place buckeyes in the fridge for 20 minutes to set.

This strawberries and cream parfait utilizes the thick cream from coconut milk to create a fluffy whipped cream that is dairy-free and free of any additives or chemicals. Simple to whip up, this dessert is light and diet friendly – even if you aren’t paleo!

Ingredients:

  • 6 cups strawberries, sliced
  • 1 (13.5 ounce can) coconut milk, chilled overnight
  • ½ teaspoon vanilla extract
  • 2-4 tablespoons maple syrup, as needed
  • chopped walnuts [optional]

Directions:

  1. Chill your coconut milk overnight. When ready to prepare whipped cream, gently remove top of the can. Do not shake. Scoop out the top cream of the milk into a bowl and reserve the liquid for another use.
  2. Add vanilla extract and 2 tablespoons of maple syrup to the coconut cream. Beat on high smooth and fluffy. Taste and add more sweetener as needed.
  3. To serve, add 1 cup of strawberries to glass followed by a scoop of whipped cream. Sprinkle with walnuts, if using.

Chunks of raw cookie dough turn a simple milkshake base into an over the top dessert. Made with a no-bake and eggless cookie dough that is safe to eat raw, this milkshake is thick, creamy and 100% paleo-friendly.

Cookie Dough Ingredients:

  • 1 ½ cups almond flour
  • 2 tablespoons tapioca flour
  • ¼ cup ghee or coconut oil, softened
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • pinch sea salt
  • 1/3 cup mini chocolate chips, dairy-free

Shake Ingredients:

  • ½ cup coconut milk, frozen into ice cubes
  • ½ cup almond milk or coconut milk
  • 1 tablespoon maple syrup
  • ¼ teaspoon vanilla extract
  • 2-3 cookie dough bites

Directions:

  1. Add all of the cookie dough ingredients except for the chocolate chips into a food processor. Process until a dough forms. Pulse in chocolate chips.
  2. Roll dough into bite sizes using a tablespoon at a time. Chill in the fridge until ready to use.
  3. To make your milkshake, add the coconut milk ice cubes, almond milk, maple syrup and vanilla extract into a high-speed blender. Blend on high until thick and creamy. Add 2-3 cookie dough bites and pulse to incorporate.

Delicious and simple to make caramel sauce is drizzled over a crisp green apple to create a healthy yet decadent dessert in these caramel apple nachos. Use the leftover caramel in other recipes such as in iced coffee or added to a homemade milkshake!

Caramel Ingredients:

  • 2 tablespoons water
  • ¼ cup coconut sugar
  • ½ cup coconut cream
  • ½ teaspoon vanilla extract
  • pinch sea salt

Nacho ingredients:

  • 1 green apple, sliced thin
  • 1 tablespoon mini chocolate chips, dairy-free
  • 1 tablespoon walnuts, chopped

Directions:

  1. Bring the water and coconut sugar to a low boil in a saucepan. Stir in coconut cream and salt and simmer for 15 to 20 minutes. Stir often so the sauce does not burn.
  2. Mixture will start to darken and thicken when it is ready. Remove from heat and stir in vanilla extract. Pour into a container and allow to cool. Caramel will thicken more as it cools.
  3. To assemble nachos, spread sliced apple on a plate. Drizzle with 1-2 tablespoons caramel sauce and sprinkle with chocolate chips and walnuts.
