This classic banana cake is topped with a high protein, low fat frosting comprised of mostly plain Greek yogurt for a creamy frosting without all of the excess fat!

Ingredients:

  • 2 cups white whole wheat flour
  • 1 ½ teaspoons baking soda
  • ½ teaspoon sea salt
  • ¾ cup cane sugar
  • ¼ cup oil
  • 4 bananas
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 1/3 cup mini chocolate chips

Frosting Ingredients:

  • 1 cup plain Greek yogurt
  • ¼ cup peanut butter
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract

Directions:

  1. Preheat the oven to 350 degrees. Spray an 8×8 square baking pan with cooking spray.
  2. In a bowl, beat together the bananas, milk, vanilla and oil until smooth. In another bowl, whisk together the flour, baking soda, sea salt and sugar. Add to the wet ingredients and beat until incorporated.
  3. Pour batter into prepared pan. Bake for 25-30 minutes or until toothpick comes out clean.
  4. While cake is cooling, prepare frosting. Beat together ingredients until smooth. Frost over cooled cake.
