Simple to make for a family dinner but just as fantastic for a BBQ with friends, these Thai peanut chicken skewers are rich in taste but not in calories!

Thai Peanut Chicken Satay

Serves 6

Chicken Ingredients:

  • ¾ cup light coconut milk
  • 2 tablespoons lime juice
  • 1 teaspoon fish sauce
  • 2 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • 1 tablespoon reduced sodium soy sauce
  • 2 pounds skinless chicken breast sliced into cutlets
  • 10 wood skewers, soaked in water

Sauce Ingredients:

  • 2 cloves garlic, minced
  • 1 teaspoon ginger
  • 1 teaspoon sriracha
  • 1/3 cup peanut butter
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons hot water
  • green onion for garnish

Directions:

  1. Combine the coconut milk, lime juice, fish sauce, garlic, spices and soy sauce in a small bowl.
  2. Place the chicken into a re-sealable bag and pour the sauce over them. Marinate the chicken in the refrigerator for at least 30 minutes.
  3. Set the oven to broil. Line a baking sheet with foil. Thread the chicken onto skewers and place on baking sheet. Pour any remaining marinade over them.
  4. Broil chicken for 6 minutes, flipping each skewer halfway through. These skewers can also be cooked on a grill pan or an outside grill if preferred.
  5. While chicken is cooking, puree together the sauce ingredients. If you prefer a chunkier dipping sauce, simply whisk together the ingredients well.
  6. Once chicken is finished cooking, lightly brush sauce onto each skewers. Allow to cool before serving.
  7. Serve chicken over jasmine rice and garnish with green onion and a side of peanut sauce for extra dipping.
