Tilapia is an incredibly lean fish that is high in protein, however it can be boring and bland when not seasoned correctly. The tilapia in these fish tacos is not only seasoned to perfection but is also paired with a delicious and flavorful mango salsa, creating a dynamic flavor combination!

Salsa Ingredients:

  • 1 mango, diced
  • 1 avocado, diced
  • 1 medium tomato, diced
  • 1/3 cup red onion, finely chopped
  • ¼ cup cilantro, minced
  • 1 tablespoon lime juice
  • salt to taste

Tilapia Ingredients:

  • 2 pounds tilapia fillets
  • 1 teaspoon sea salt
  • ½ teaspoon pepper
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 12 corn tortillas
  • limes, optional

Directions:

  1. Prepare the mango salsa by mixing everything together gently. Toss with a spoon. Set aside.
  2. Set oven to broil. Prepare a baking sheet with parchment paper or foil. Set aside.
  3. In a small bowl, combine the tilapia seasoning ingredients. Distribute evenly amongst the fillets.
  4. Lay the fillets onto the prepared baking sheet. Broil for 3 minutes, flip fillets over, then broil 3 more minutes or until fish flakes easily.
  5. Roughly chop or flake apart fish. Distribute amongst the corn tortillas and top with a spoonful of mango salsa. Serve with extra lime juice, if desired.

Subtly spicy and perfectly sweet, these chicken tacos make for an innovative healthy taco recipe. A simple cilantro sour cream takes the flavors of this dish to the next level, so don’t skip it!

Chicken Ingredients:

  • 2 pounds chicken breast, boneless and skinless, cubed
  • 1/3 cup honey
  • 1 ½ teaspoons chili powder
  • 2 teaspoons chipotle powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder

Sauce Ingredients:

  • 1/3 cup sour cream, light
  • 1 tablespoon cilantro, minced
  • ½ lime, juiced
  • sea salt, to taste

Additional Ingredients:

  • corn tortillas
  • green onions, chopped
  • avocado, chopped
  • red onion, chopped
  • fresh cilantro, minced

Directions:

  1. Whisk together the honey and seasonings. Place the chicken into a ziplock bag, then pour over the marinade. Allow chicken to marinate for 30 minutes or longer, if you have the time.
  2. Heat a skillet over medium heat with one tablespoon of olive oil. Add chopped chicken and cook until no longer pink.
  3. While chicken is cooking, whisk together the sauce ingredients. Set aside.
  4. To serve your tacos, add chicken to a corn tortilla and top it with your additional ingredients of choice. Add a dollop of cilantro sour cream and serve.

Tacos don’t always need to contain meat, especially when they are loaded with perfectly spiced sweet potatoes! Paired with black beans to create a protein-filled and fiber-rich dish, these tacos are a great vegetarian option.

Sweet Potato Ingredients:

  • 1 large sweet potato, cut into ½ inch cubes
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin

Additional Ingredients:

  • 1 15-ounce can black beans, drained and rinsed
  • ½ cup salsa of choice
  • corn tortillas
  • fresh cilantro, chopped
  • red onion, chopped
  • avocado, diced
  • feta cheese
  • fresh limes

Directions:

  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. Set aside.
  2. In a bowl, toss together the sweet potato ingredients. Spread into a single layer on the prepared baking sheet. Bake for 15 minutes, flip, then bake remaining 15 minutes.
  3. While sweet potatoes are roasting, toss together the black beans and salsa in a small pot. Heat over medium until warmed through.
  4. To assemble tacos, distribute sweet potatoes, black beans and additional ingredients of choice onto each taco. Serve with a squeeze of fresh lime, if desired.
