In fact, oat flour (rolled oats that have been processed into flour) is becoming increasingly popular as more and more people turn to a gluten-free lifestyle. But what can you do with it?
Oat flour can be used in place of regular flour in almost any recipe, such as with the waffles below. Oat flour is a fantastic source of dietary fiber called beta-glucan, a type of fiber that is known to help reduce bad cholesterol. With just over 8 grams of fiber per cup of dry oats, using oat flour in baking recipes is the perfect way to help you reach your daily fiber goals. Rolled oats also contain manganese, selenium, phosphorus, fiber, magnesium, zinc, vitamin A and carotenoids.
These Strawberry Banana Greek Yogurt Waffles utilized rolled oats by blending or processing them into the batter, thus turning them into oat flour. Full of Greek yogurt and eggs for added protein, these waffles are a healthy and fiber-rich way to start your morning.
Strawberry Banana Greek Yogurt Waffles
Makes 3 Belgium Waffles
2 cups rolled oats
2 teaspoons baking powder
½ teaspoon cinnamon
¼ teaspoon sea salt
1 banana, ripe
½ cup non-fat Greek yogurt
¼ cup almond milk
3 tablespoons honey
¼ cup diced strawberries
Heat a waffle iron and spray it with cooking spray.
Add all ingredients except strawberries into a high-speed blender or food processor. Blend until smooth. Stir in the strawberries.
Add batter to your waffle iron, being careful not to fill too much so it doesn’t over flow.
Cook until waffles are done. To serve, top with additional toppings and desired syrup.
